English: A dish of Stir-Fry Spinach with Tofu 菠菜炒豆腐, also referred as 金鑲白玉板，紅嘴綠鸚哥[1], roughly translated in English as Golden White Jade and Green Parrot. In China, it is rumored that both Qianlong Emperor and Empress Dowager Cixi liked the simple-yet-delicious stir-fried dish. Picture taken in Clovis California.

Recipe:

• a pack of firm tofu
• 4 cups of cooking oil for deep-frying (or 2 teaspoons of it for air frying)
• 2/3 pound of spinach
• 1/4 pound ground pork
• 1/2 tablespoon minced garlic
• 1/3 teaspoon salt
• 1/3 teaspoon pepper
• 1/3 sesame oil

1. Cut tofu into pieces, pat dry with a paper towel 2. Heat oil and deep-fry tofu for 4 minutes over high heat until crispy and golden. Remove and drain. (Alternatively, if rather using an air fryer instead, cook on 370ºF for 20 minutes after coating the tofu with just 2 teaspoons of cooking oil.)

3. Rinse spinach then cut into 4 section. Heat 1 1/2 tablespoon oil and then stir-fry minced garlic and ground pork until fragrant. Add the spinach and stir-fry briefly. Add 1/3 cup of water and add salt, pepper, and sesame oil with fried tofu and cook until steamy; continue to cook for 2 minutes. Remove and serve.
